PRIMO SALE

The "Primo sale" is a typical Sicilian cheese that is obtained from the processing of raw sheep's milk. Primo sale (First salt) means a certain degree of ripening of the Pecorino cheese that is around one month. If, in fact, the Primo sale is matured for a further four months, will get into Secondo Sale (Second Salt).

 

It is a classic of the typical dairy of Sicily, with a soft texture, with a white color that tends to yellow, mellow taste and harmonized. Is placed to the market after a light brine, which enhances the characteristics Mediterranean notes.

The First Salt is also available in a version with black pepper, pistachio, and filled with chilli pepper. 

 

Is great if cooked to the plate for a few minutes and served with oregano.
