TRADITIONAL FOOD PRODUCTS
During the routes of Experience of Sicily visitors will discover some traditional agri-food products. The PAT are agricultural products selected by the Ministry of Agriculture, Food and Forestry with the aim of enhancing those products obtained by methods of processing, storage and maturing consolidated over time and uniform across the entire region, according to traditional rules, for a period not less than twenty-five years.
PRIMO SALE
The "Primo sale" is a typical Sicilian cheese that is obtained from the processing of raw sheep's milk. Primo sale (First salt) means a certain degree of ripening of the Pecorino cheese that is around one month.
SAUSAGE PASQUALORA
The pasqualora is a sausage made exclusively with pork and with the addition of salt, black pepper, red pepper, white wine and fennel seeds. Once produced it is left to mature for a week or two.
